I like these suggestions! Getting hungry.
One thing I do make for myself when I'm craving mexican is bean burritos. I use wheat tortilla wraps (heated wrapped in foil at 350 for 10 min) and throw in some fat free refried beans or black beans (from the can, drained), a little salsa, maybe some corn, add some chili powder (because i like it hot) and use low fat or skim shredded mexican blend cheese. Wrap 'em up and throw in the oven for at least 10 minutes (longer doesn't hurt -- especially if you like the tortillas a little crunchy like i do.) (I guess you can add sour cream too, but I hate sour cream.)
I also sometimes make nachos using the multi grain Tostito chips and basically the same as above, sometimes adding a bit of turkey chili w/beans.

sounds yummy Jules, I just nuke my tortillas in the microwave wrapped up in a tea towel but if you like them crunchy then I can see using the oven

Sorry, does not appeal to me Freckles.
The asian meatball slow cooker soup was almost a success. The recipe needs adjusting. Back to the drawing board.

What did the meatballs have in them? I use a mixture of hamburger and sausage to get a good flavor with my meatballs.

just ground beef, i had a feeling it would suck but i was following a recipe. I am going to use the base for a wonton soup. Oh it was sooooooo good. Also could be used for a spicy chicken soup base.........many things actually. I take parts of recipes and use them for other things often. What did the meatballs have in them? I use a mixture of hamburger and sausage to get a good flavor with my meatballs.

My basic meatball recipie calls for:
equal parts hamburger and sausage garlic powder Worcestershire sauce parsley beaten egg bread crumbs
I don't have exact measurements, I go by site. For an asian style dish you can leave the Worcestershire sauce out and maybe add Yoshida sauce.

For the meatballs, 1/2 lb Ground beef 1/2 lb Ground Pork 1 - 2 tbsp finely chopped ginger tbsp finely chopped garlic chopped scallions 1-2 tspn vegetarian oyster sauce a little white cooking wine (if you can, find rice wine) 1-2 tspn fish soup base powder (find it at an asian market) a little Teriyaki sauce 1/2 cup bread crumbs 2 eggs 1/2 tspn 5 spice powder
The above measurements are VERY approximate. I actually dont measure anything, so I dont know them at all. My grandmother from taiwan showed me this. Its a bit more traditional so I dont know if people will actually like it.
