ok, so mel and i were on the phone earlier and we were talking about starting a thread for recipes that are perfect for cold yukky weather....so here's my first one. oh, and if you are capable of opening a can, you can make this one. it just doesn't get much easier than this.
Mexican Soup
2 big cans of canned chicken (usually sold by the tuna) 2 cans of chicken broth 2 cans of corn 2 cans of black beans 2 cans of Rotel tomatoes 1 package of taco seasoning 1 package of ranch dressing mix (the powdered stuff)
Dump in pan. Heat up. Eat.
variations/hints/etc.
~ don't drain anything before you dump it in. just open the cans and dump.
~ i try to dump the chicken in the pan first (if i remember) and sort of smoosh it up with a wooden spoon (or whatever i'm using to stir as it's cooking). that way it comes out more like shredded chicken rather than chicken lumps.
~ you can use leftover chicken (or really any kind of meat would probably work)
~ i buy the low sodium chicken broth, corn, and taco seasoning. otherwise it gets pretty salty.
~ if you don't want it as spicy, substitute plain diced tomatoes for one or both of the Rotels.
~ you can also dump in some brown minute rice....i have no idea how much, as i just dump. if it looks like it's too thick after the rice cooks, throw in some more broth.

I like it, quick easy and you can make all kinds of substitutions to change it up.
Rinsing the food in the cans will also reduce the sodium level.
