Super easy, the kids loved it and I've got enough for leftovers the next day, so I only need to cook once in two days.
Add a different green vege side each day.
Baked Noodles
1 lb flat noodles, cooked 1 stick butter, melted 4 green onions chopped 1 tsp garlic powder 2 cups cottage cheese 1/4 cup fresh parsley, chopped 1/2 cup sour cream 1/4 cup parmesan cheese 1/4 tsp black pepper
Mix melted butter, green onions, garlic powder, cottage cheese and parsley in a big bowl. Stir in cooked noodles. Stir in sour cream, parmesan cheese and pepper.
Pour into a big oven pan.
Cover with foil and bake at 350 for 25 minutes.

Oh wow, that sounds so yummy. Couple of questions: An entire stick of butter??? Any substitutions? Do you really taste the sour cream? Possible to skip it? Yeah, I know, I'm a picky bitch.

Instead of butter, I used Smart Balance and it worked fine. In fact, I use Smart Balance for everything, tastes good and holds a high heat.
Don't know about the sour cream. I'm sure you can taste it, but it is such a minimal amount in an entire box of pasta, that I didn't worry about it.

That's kind of what I was thinking. I bough a big rotisserie chicken last night and with it being just me, I have a lot leftover. So, I was trying to think of something to do with it so I can have friends over for dinner Friday and this popped into my head. Bet it would be great!

The kids really loved it.
Depending on how much chicken you use, I would increase the wet ingredients by about half a cup so the chicken doesn't dry out. Your choice as to which ingredients to bump up, or bump them all up by a little. I don't think you can mess it up.

Okay, made this over the weekend. Used leftover turkey (as there was plenty). It was actually pretty good! Very light tasting, not heavy at all. I really liked it!

I made this too, after reading it a couple of weeks ago. It was pretty good, light tasting as someone said. I think the next time I make it, I would use minced garlic rather than garlic powder, and maybe some other spices...punch it up a little. But, it was very good!

I like the idea of using minced garlic. It might bring down the garlickiness of it and adding a few crushed red peppers. YUM! I might have to make it again this weekend.
